One of my readers, Yana P. wrote in and shared this Calabrian Walnut Cake with us and since there is a Walnut allergy in the family, we made it (even simpler) into an almond flour cake and changed the proportions. I made it 3 times in 1 week and it disappeared fast every single time. Its a keeper!

How to Separate Eggs and Bring to Room Temperature:

To separate eggs, you can either use an egg separator or the shells of your egg if you get a clean break on the shell. It is easier to separate eggs while they are cold. To do that, separate eggs then cover and leave at room temperature no more than 30-60 minutes. You could also separate them and place into separate small bowls and set the egg whites over a larger bowl with warm water so the bowl with the egg white warms up within 5-10 minutes.

Prep Time: 10 minutes mins

Cook Time: 30 minutes mins

Total Time: 40 minutes mins

Ingredients

Servings: 8 slices

Almond Cake Ingredients:

  • 1 1/2 cups almond flour, * measured correctly
  • 4 eggs, separated, room temperature
  • 1/2 cup granulated sugar
  • 1 Tbsp lemon zest, grated from 1 large lemon
  • 1/4 cup sliced almonds
  • Confectioners sugar and lemon slices for garnish, optional

Instructions

Prep:

  • Grease/butter a 9" cake pan or 9" springform pan. Line the bottom with a circle of parchment paper. Preheat oven to 350˚F.

Almond Cake Recipe Instructions:

  • In a large mixing bowl, combine 4 egg yolks and 1/2 cup sugar. Beat with an electric hand mixer on high speed 3 minutes or until thick, creamy and lightened in color. Add 1 1/2 cups almond flour and 1 Tbsp lemon zest and use a spatula to fold and stir together until incorporated. Wash and dry attachments from the mixer.

  • In a second large mixing bowl, add 4 egg whites and beat together until stiff peaks form (about 2 minutes). Fold the egg whites 1 heaping spoonful at a time into the almond batter, folding with each addition just until incorporated and scraping from the bottom of the bowl to ensure batter has an even consistency.

  • Once all the egg whites are incorporated and batter is even in consistency (do not over-mix), transfer batter to the prepared baking pan and sprinkle the top with 1/4 cup sliced almonds. Bake at 350˚F for 30 minutes or until top is firm.

  • Let cake rest in the pan 15 minutes then run a thin spatula around the sides and invert it onto your hand then place it right side up on the rack. Let cool to room temperature and garnish with powdered sugar and lemon slices if desired.

FAQs

Why is my almond flour cake dry? ›

When almond flour is overmixed, its absorbent nature can become a pitfall. The more you mix, the more the fat in the almond flour is released and absorbed, resulting in a dry, crumbly texture in your baked goods.

What does almond flour do to cakes? ›

Sometimes tenderness is what you're after, especially in cakes or muffins, and that's where almond flour shines. Used alongside all-purpose or whole grain flours, it can lighten a batter or dough, adding depth and softness without heft.

Why does almond flour not bake well? ›

Almond flour is denser than wheat flour, so it cannot be used as a 1:1 replacement for wheat flour in a recipe. It requires different measurements and adjustments to achieve the right texture in baked goods.

What happens when you replace all-purpose flour with almond flour? ›

Almond flour is a little more moist than wheat flour, and doesn't have quite the same binding qualities. You'll do best to substitute 1:1 to begin with, as many recipes respond well to this direct replacement. But be prepared to add more almond flour as you go to compensate for the wetter batter.

Do you need more eggs when using almond flour? ›

Additionally, almond flour is naturally gluten-free which usually acts as a binder in other flours. Try adding extra eggs (or simply egg whites) to combat this. Many recipes call for more eggs if you are using a 1:1 flour ratio.

How much baking powder for 2 cups almond flour? ›

2 cups (192g) finely ground almond flour, blanched or natural. 2 tablespoons (14g) cornstarch. 2 teaspoons baking powder.

What is a good binding agent for almond flour? ›

In the absence of gluten, almond flour needs a little help to bind ingredients together. Eggs are a traditional and effective binding agent, providing structure and elasticity. However, for those seeking a vegan option or for recipes that don't require eggs, xanthan gum is a popular alternative.

How much almond flour do I use to replace 1 cup of all-purpose flour? ›

Baking with almond flour
  1. For yeast dough of all kinds (bread, rolls, pizza), add up to 1/3 cup almond flour per cup of wheat flour (all-purpose, bread, whole wheat, etc.)
  2. For non-yeast treats (cookies, scones, cake, biscuits, muffins, etc.), substitute almond flour for 1/4 (25%) of the flour in the recipe.

Can I use almond flour instead of cake flour? ›

When you use it as a substitution for cake flour, you'll want to reduce the total flour by a quarter. We love that using almond flour results in a sweet and nutty taste that makes our baked goods more interesting.

What is a Mary Jane cake? ›

noun. a small, round sponge cake, usually with a circular indentation on top, for topping with fruit, whipped cream, etc., and served as an individual portion.

What is a godfather cake? ›

A two-tier Godfather themed cake featuring all hand-modeled and edible elements from the classic movie. The cake is lemon chiffon with a delicious raspberry butter-cream filling, covered in dark chocolate ganache and LMM fondant.

What is a domino cake? ›

It is specially made for those who love as much our lemon cakes as tiramisu. Half of it is a delicate cake with three layers of lightly soaked sponge, with vanilla flavor and two layers of lemon-flavored cream, dusted with powdered sugar.

How to improve the texture of almond flour? ›

The Basic Baking Guidelines

Our chef prefers to add a little xanthan gum or cornstarch to the almond flour to help with the texture, though it is not entirely necessary to do so. Almond flour is pretty forgiving in that regard. Some use arrowroot powder to achieve a similar effect in their bread recipes.

How much almond flour equals 1 cup all-purpose flour? ›

Almond flour can be substituted for regular flour at a 1:1 ratio. It is important to note that almond flour may require more egg to bind the flour. Check out our almond flour recipe book here for more information on a specific recipe!
