How to Make Ham, Egg & Cheese Breakfast Sliders

How to Make Breakfast Sliders:

  1. Start by scrambling the eggs, then set aside
  2. Place the bottom half of the rolls on a lined sheet pan (do not separate the rolls; leave them connected)
  3. Cover the rolls with 6 slices of cheese, be sure to cover the entire layer of rolls
  4. Add the scrambled eggs next
  5. Now layer on the ham
  6. Then add more cheese
  7. Place the other half of the rolls on top
  8. Mix melted butter, Dijon, and brown sugar together to create the sauce & pour over the sliders
  9. Bake for 20 minutes at 350°F

Can you make them meat free?

Sure! You can easily make these breakfast sliders vegetarian by simply leaving out the ham. They are great without, or try swapping it for a plant based option like Tofurky if you like.

What are the best rolls to use for sliders?

I love to use Hawaiian rolls for this recipe, they have a nice sweetness that compliments the filling really well. Brioche slider buns would work great too.

What other fillings can you use?

I love this combo of eggs, ham and cheese, but you could easily add bacon, sausage or even hash browns!

I’ve made before (and they are SO GOOD), but those are more of a lunch recipe. I just had to turn these into a breakfast recipe, because I can’t get over how good they are. I added eggs, more cheese, and an amazing brown sugar dijon butter sauce to give them a little but more sweetness.

These cheesy baked breakfast sliders are the perfect recipe for a crowd, because you can make a lot on one baking tray. I love how they bake together, and then you can pull them apart one by one…kind of like cinnamon rolls! They just taste better when everything is baked in one big clump of cheese, egg, ham, and sauce.

So if you have a lot of people to feed–whether it’s a big family, friends visiting from out of town, or an early morning tailgating party–this easy breakfast sliders recipe is perfect!

Ingredients

  • 10 eggs
  • salt and garlic pepper or regular black pepper to taste
  • 1 package 12 rolls sweet rolls
  • 12 slices Sharp Cheddar
  • 1/2 pound thinly sliced honey ham
  • 1/4 cup salted butter melted
  • 1 tablespoon brown sugar
  • 1 tablespoon whole grain dijon mustard

Instructions

  • Preheat oven to 350F

  • Scramble the eggs over medium heat, adding salt and garlic pepper to taste. Once scrambled to your liking, set aside.

  • Spray a small sheet pan with nonstick spray or line with foil.

  • WIthout separating the rolls, cut the entire group in half lengthwise. Place the bottom half on the sheet pan.

  • Top with 6 slices of cheese, covering the bottom section of rolls.

  • Top with the scrambled eggs.

  • Top with the ham.

  • Top with another 6 slices of cheese.

  • Cover with the top layer of rolls.

  • Mix together the melted butter, brown sugar, and dijon.

  • Pour over the tops of the rolls and brush to make sure the rolls are fully covered with the mixture. The more the better, trust me!

  • Bake for 20 minutes or until cheese is fully melted and the tops of the rolls are golden and crisped.

  • Serve and enjoy!
