Diagnosed with Celiac Disease

I started creating healthy dessert recipes when I was diagnosed with celiac disease in 1998, during the Dark Ages of gluten free.

At that point, following a gluten free diet became critical.

Over the years, I’ve learned how important eating low carb is as well, given that celiac and diabetes ride on the same gene –having one increases the likelihood of having the other.

Easy Gluten Free Recipes

This is also why I started following a grain free diet, a couple of decades ago. Almond flour and coconut flour make up the base of my easy gluten free recipes. No corn, potato, or rice flour here!

Recipes with Almond Flour

After testing just about every gluten-free flour available, I can save you a lot of time and hassle when I say that almond flour is far superior to most other gluten free flours in terms of:

  • Taste
  • Ease of Use
  • Nutrition

Easy Recipes for Gluten Free Desserts

And this crisp is another one of my easy recipes for gluten free desserts made with almond flour.

It also has even less added sweetener than the usual peach crisp, with only one tablespoon of maple syrup in the entire recipe.

Recipes for Healthy Desserts with Fruit

Yes, you can have your cake and eat it too! This is important when dessert is your favorite part of the meal and you don’t believe in deprivation.

That’s why I’ve created so many dessert recipes that are easy and healthy.

Read on for more fruit desserts below.

Apple Crisp Recipe Easy

When I create a recipe, saving time in the kitchen is essential, but preparing delicious and nutritious recipes for my family is just as important.

My Apple Blackberry Crisp can be assembled in 10 minutes!

It’s made with apples, blackberries, lemon juice, and vanilla, then finished off with a high protein almond flour crumble topping, sweetened with a touch of maple syrup.

The boys used to say, mom, would you make us a apple crisp recipe when they were little, and I would chuckle as they fumbled adorably for the proper article while making their request.

Now they’re all grown up and still ask for apple crisp when they come home to visit!

Looking for a sugar free tart apple dessert that is best served a-la-mode? Try my Granny Smith Apple Crisp made with granny smith apples, almond flour, ground cinnamon, and xylitol.

Recipe for Berry Crisp

Bursting with low carb fresh strawberries, my healthy sugar-free Strawberry Crisp is a great keto dessert.

This is a truly simple recipe made with 5 ingredients, where your oven does most of the work.

While baking the strawberries, use your food processor to pulse together the low carb, gluten free topping made with almond flour, slivered almonds, salt, and shortening or butter.

Recipes for Plum Jam

Luscious homemade jam is fruit at its finest. My Sugar Free Plum Jam Recipe cooks down the whole fruit with water, lemon juice, and stevia. Nothing more!

It’s full of fiber, loaded with a healthy dose of vitamin C, and bursting with tart flavor.

I love serving Sugar Free Plum Jam on top of toasted Keto Bread smothered in ghee.

Healthier Dessert Recipes with Almond Flour

I made this yesterday. I used apples instead of peaches because it’s apple picking time in Kingston, Ontario, Canada. This recipe is now the only one I’m going make! I used chopped dates instead of sugar because I’m weaning myself off refined sugar.‍ And definitely maple syrup. It feels good to eat a dessert that has protein as a main ingredient. Delicious!

This was the first time I used one of your recipes and this one is a winner! My hubby loved it and asked for more. I made it just as written but I did spray the dish with coconut oil because I didn’t want it to stick. Can’t wait to try some more of your almond flourvrecipes.

I just made this and it is so delicious! I sprinkled a little cinnamon in it because I love the taste of peach cobbler and it was great that way. 5 medium peaches weighed 2 lbs before I sliced them up, just FYI for anyone who does not have a digital scale. It tastes great how it is, but I may experiment with substituting the maple syrup with something sugar-free. It would not be paleo, but it would reduce carbs and sugar by a few grams per serving. Thanks for the recipe, it will definitely be used again and again!

FAQs

Can I use gluten free flour instead of almond flour? ›

This premade blend of multiple gluten-free flowers can be a great substitute for almond flour. It typically mixes rice flour, potato starch and tapioca starch, with different brands containing different ratios. Use in a 1:1 ratio as a substitute for almond flour.

Why can't you use baking powder with almond flour? ›

Since baking powder contains baking soda, baking powder cannot be used in almond flour baking. Instead, eggs (or applesauce or bananas) can be used as the leavening agent to help baked goods rise and achieve a light and fluffy texture.

What happens when you replace all-purpose flour with almond flour? ›

Almond flour is a little more moist than wheat flour, and doesn't have quite the same binding qualities. You'll do best to substitute 1:1 to begin with, as many recipes respond well to this direct replacement. But be prepared to add more almond flour as you go to compensate for the wetter batter.

How much gluten free flour to substitute for almond flour? ›

Gluten-free flour blend. The rule of thumb for gluten-free flour substitution for almond flour is a 1:2 ratio. For instance, if the recipe calls for 2 cups almond flour, you'll need about 1 cup of a gluten-free flour blend.

What flour can I substitute for almond flour? ›

Regular Flour

If you're looking for the cheapest option for a nut-free substitute in almond flour recipes, it's hard to go past good old wheat flour or white flour. Although it does have the pesky gluten problem. All purpose flour won't work in things like meatballs but it's a good option for cakes and other sweets.

What is the trick to baking with gluten free flour? ›

Gluten-free flours often contain fine starches, so they absorb more liquid than conventional flour. To address this, gluten-free recipes usually call for more liquid and produce looser batters. They may also call for a larger quantity of leavening, like baking powder, to help add volume and lighten the texture.

How do you substitute almond flour in baking? ›

Almond flour is denser than wheat flour, so it cannot be used as a 1:1 replacement for wheat flour in a recipe. It requires different measurements and adjustments to achieve the right texture in baked goods. A good rule of thumb is to use 1/2 to 3/4 cup of almond flour for every 1 cup of wheat flour in a recipe.
